Yummy and low-fat Chicken Spaghetti Ok how many of you over-ate over the Christmas Holiday? I know I did. And every year after the holidays, I go to this wonderful recipe I got years ago at a Weight Watchers Meeting. It is delicious and only 4.5 Weight Watcher points per serving. To say the phrase, "If you build it, he will come" from the 1989 movie 'Field Of Dreams' was my inspiration to build a quilt shop/fabric store on our 2200 acre cattle ranch in the beautiful Ozark Mountains sounds crazy.....but it's true. The Super Bowl is just a few weeks away. Here is a great recipe to use for entertaining on the big night. Not only do I love having grown up on a cotton farm, living now on a cattle ranch, and living in the beautiful Ozark Mountains, I also love the Rockies. The perfect side dish for beef, pork, or chicken. It adds a delicious taste of sweet and tart to any dinner. And is one of our family favorites. Enjoy! INGREDIENTS: 4 Cans pitted apricot halves (drained) 2/3 Cup brown sugar 1 Sleeve Ritz Crackers (crushed) 1 Stick melted butter INSTRUCTIONS: Preheat oven to 300 degrees. Butter a 9"x13" casserole dish and layer two cans of apricots, 1/3 cup brown sugar, half the sleeve of crushed crackers. Repeat ending with crackers on top. Pour melted butter over top.
