Yummy Quiche

My most favorite thing to eat for breakfast (other than my husband's Sunday morning biscuits and gravy) is this Yummy Quiche recipe that I got a few years back from Allrecipes.com.  I just make it up the night before and leave in the refrigerator over night.  The next morning I just pop it in the oven and VOILE!!   Breakfast!  Enjoy!

 

INGREDIENTS:

*1 pound bacon

*2 (9 inch unbaked pie crust)

*4 cups sharp cheddar cheese (shredded)

*2 cups shredded Monterey Jack cheese

*1/4 cup plus 2 tablespoons flour

*10 eggs, lightly beaten

*3 cups half and half

*1 cup diced onion

*2 (4 ounce) cans diced green chili peppers, drained

 

 

DIRECTIONS:

1--Preheat oven to 350 degrees.  Place bacon in large skillet and cook over medium high heat until evenly brown.  Drain, crumble and set aside.

2--Place crust in a 9 inch glass pie plate.  Sprinkle bacon inside of crust.  In a small bowl, combine Cheddar cheese, Monterey Jack cheese and flour.  In a separate bowl, beat together eggs, cream, onion and green chilies.  Add cheese mixture, stir well.  Pour mixture into pie crust.

3--Bake in preheated over for 60-70 minutes until set.  Let stand 10 minutes before serving.  Makes 2 pies.
