Recipe Wednesday - YUMMY Quiche

Every year in about late August or early September I swing into baking mode.  Most people think of baking as breads and cakes and cookies, but the first thing I want to bake at the end of summer right before the holiday baking season begins is.....breakfast quiche. 

You can make it the night before and pop it in the oven about an hour before everyone gets up in the morning and....oh my!!  What a warm morning treat!  My favorite quiche recipe is "YUMMY QUICHE".  It is filled with flavor with bacon, cheese, onions, green chili peppers, and cream.  Thus the name.....YUMMY Quiche.

INGREDIENTS:


8 ounces bacon
1 unbaked 9 inch pie crust
2 cups shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
3 tablespoons all purpose flour
5 lightly beaten eggs
1-1/2 cups half-and-half
1/2 cup diced onion
1 (4 ounce) can diced green chile peppers, drained


DIRECTIONS:
1--Preheat oven to 350 degrees.  Place bacon in skillet and cook over medium high heat until evenly brown.  Drain, crumble and set aside.

2--Place crust in a 9 inch glass pie plate.  Sprinkle bacon inside of crust.  In a small bowl, combine Cheddar cheese, Monterey Jack cheese and flour.  In a separate bowl, beat together eggs, cream, onion and green chilies.  Add cheese mixture; stir well.  Pour mixture into pie crust.

3--Bake in preheated over for 60 to 70 minutes, until set.  Let stand 10 minutes before serving.
