Low Carb Weight Watchers Cheesy Vegetable Soup

Well, we all get to that age where we pack on a few pounds.  And if you are there and are looking for a great low carb soup recipe, here it is  One of the ladies in our Block of The Month Class brought this delicious soup to the February Class and left a copy of the recipe.  It's a Weight Watchers Recipe and it is delicious.

 

INGREDIENTS:

2 lb Bag Frozen Mixed Vegetables (or any combination of frozen veggies)

3 cans fat-free chicken broth

 

 

1 can Rotel

10 oz Velveeta light cheese

 

DIRECTIONS:

 

Cook first three ingredients until tender.  Mash up or blend mixture and cook until hot.  Add Velveeta.  NOTE:  Do not boil or cheese will separate.

Not watching your carbs?  This delicious soup is wonderful served in a bread bowl!
