Baked Apricots Recipe

Here is a great side dish that goes with beef, pork, chicken, or fish.  And it is so easy with only four ingredients.  It's called BAKED APRICOTS and comes from an old friend of mine.  I think you will enjoy it as much as my family does.

INGREDIENTS:

4 cans pitted apricot halves (drained)

2/3 cup brown sugar

1 tube Ritz crackers (crushed)

1 stick melted butter

DIRECTIONS:

Butter 9x13 casserole dish and layer 2 cans of apricot halves, 1/3 cup brown sugar, and half of the crushed Ritz crackers.  Repeat with a second layer ending with the crackers on top.  Pour melted butter over top.  Bake at 300 degrees for 40 minutes.

Serve hot out of the oven, and for a special treat, add a dollop of vanilla ice cream on top of each serving.  Yum!!!
